What to do when you receive white truffles?
Frequently asked question
Yes. During years with poor harvests, the price of premium White Truffles (Tuber Magnatum) can exceed the price of gold by weight. Their rarity, short season, inability to be reliably cultivated, and exceptional demand from luxury restaurants make them one of the world's most expensive gourmet ingredients.
Unlike cultivated mushrooms, White Truffles live in a highly complex symbiotic relationship with tree roots and soil microorganisms. Despite significant scientific advances, no one has yet developed a reliable commercial cultivation method for Tuber Magnatum, which is why wild-harvested specimens remain so valuable.
White Truffles typically grow between 5 and 30 centimeters below the surface. Hidden underground, they rely on specially trained dogs to locate them, as they cannot be easily detected by sight alone.
While pigs were traditionally used to find truffles, dogs have become the preferred choice because they are easier to train, less likely to eat the truffles they discover, and cause less damage to delicate truffle habitats.
No. Once harvested, a White Truffle stops growing completely. This is why experienced truffle hunters wait until the truffle reaches full maturity underground, ensuring maximum aroma, flavor, and market value.
Unlike many mushrooms that spread spores through the air, truffles grow underground. Their intense aroma evolved to attract animals, which dig them up, consume them, and help distribute their spores throughout the forest ecosystem.
Some White Truffles have weighed over 1 kilogram (2.2 lbs). The largest specimens are often sold at prestigious auctions and can achieve extraordinary prices due to their rarity, size, and collector appeal.
Each White Truffle develops its own aromatic profile depending on soil composition, tree species, climate conditions, moisture levels, and microbial activity. This natural variation makes every truffle unique.
A White Truffle may take several months to fully develop underground. Throughout this period, it interacts with tree roots and surrounding soil microorganisms, gradually building the complex aroma compounds that make it so prized.
The most prized characteristic of Tuber Magnatum is its aroma. High temperatures quickly destroy many of the delicate volatile compounds responsible for its fragrance. For this reason, White Truffles are traditionally shaved fresh over warm dishes immediately before serving.
